Elaboration Reyes de Aragón Reserva Brut
Once the varieties are harvested by hand and separately, they are crushed and destemmed. Once in the stainless steel tanks, all the flower must will be extracted within a few hours, so that it ferments separately at a temperature of 16º, in this way we obtain the base wine. A second fermentation is what turns the resulting wine into sparkling wine. We add sugar and yeast in the same bottle. It is the traditional method, called "champenoise". The cava remains in aging for 20 months, in this way the yeasts bring all the aromatic character to the cava, giving it a great personality. When the sparkling wine is aged in the cava, the bottles must be removed in the so-called desks. The bottle is spinning until all the sediments are deposited in the neck of the same.
