History of the Ximénez-Spínola Winery
This is the Jerez winery of the successors of Phelipe Antonio Zarzana Spínola. The winery's first documented export in notarial protocols dates back to 1729, although no manuscripts relating to its commercial activity are preserved until 1736, nor are they preserved regarding this particular varietal until 1752.
The circumstances of "Ximénez-Spínola" make it a unique winery in the entire Jerez region, as no other family with a winemaking tradition has dedicated itself and continues to dedicate itself exclusively to the Pedro Ximénez grape. It has even obtained recognition from the Spanish authorities with the granting of the "Pedro Ximénez Varietal Designation of Origin."

They are developed using techniques we developed ourselves, techniques that have distinguished our family in recent years, as they are completely different from the wines currently protected by the Jerez-Xerés-Sherry D.O.
Precisely because of these differences in winemaking and distilling, Ximénez-Spínola remains an independent, family-run company, focused on quality and customer loyalty, rather than large-volume production. Consequently, by unanimous agreement of the Family Council, our entire production is limited and numbered, making each bottle unique while guaranteeing the quality and excellence of its contents.
We appreciate our status as a "House of Winegrowers," which continues to make important decisions through the Family Council or the Tasting and Selection Committee. Despite not pursuing high production, we are very proud to satisfy our customers and continue in the trade of our ancestors, just as they would if they were in our place today.
