Varieties of grapes used: 98% Garnacha 2% Macabeo, Garnacha Blanca, Provechón, Monastel.
Harvest in boxes in the 2nd half of October.
Once the grape is transferred to the cellar, it is cooled with dry ice and then destemmed and shelled manually (all the grains with some defect are removed: shaved, raisins, greens, etc ...) to open barrels of
500 lts. After a cold maceration of approximately 7 days the wine ferments naturally with its native yeasts, with several daily batonnages. Once fermented and pressed, it performs malolactic fermentation in the same 3 year old barrels where it makes the alcoholic fermentation. Later the wine remains 12 months more in barrels until bottled without filtering or stabilizing.
Serve at a temperature of 14-16ºC.
It is a good accompaniment to red meats and game.
