Elaboration of ALBARIÑO O DO AVO MARCELO
The harvest is destemmed and crushed and then transferred to the pneumatic press; After the must is destined to a deposit to unstuff (decant) during a day, at the end of that time the clean part is separated with fermentation (18º C) and the sludge is filtered with the empty filter. After the fermentation the wine is racked to separate it from the lees.
The next process is cold stabilization, subjecting the wine to 5ºC in an isothermal tank for a week to precipitate the bitartrates. After this week the wine is taken out of the cold, filtering through the land and then proceeding with amicrobial filtering and bottling.

Rías Baixas is a designation of origin belonging to the region of Galicia. Specifically the form the coastal part of a part of Galicia, concerning the province of La Coruña, the province of Pontevedra to the Ria de Vigo.
The variety of Albariño grape has been cultivated in these lands for more than 1000 years, and since the 12th century the existence of Albariño wines has been known. Bo octante is from the mid-twentieth century, when this variety extends throughout the territory.
In the 80s, the Regulatory Council of Rías Baixas and the Rias Baixas Designation of Origin were created.
