Elaboration of Aura Sauvignon Blanc
The night harvest made it possible for the grapes to enter the cellar at 10° and 15°C, a low temperature that facilitates the preservation of varietal aromas. In addition, harvesting at night means significant energy savings, favoring sustainability. The musts fermented at a controlled temperature (16º), and were then aged on fine lees for 4 months to gain complexity and volume on the palate.
