Elaboration of Barón de Filar Reserva
Harvest: The grapes at their optimum point of maturity are harvested manually in boxes of 15 kg.
Elaboration: After a first selection of grapes in the vineyard, already in the winery, the vintage goes through a grain selection table, and then a soft destemming and crushing.
Fermentation: Alcohol - A cold maceration of 72 h. in an inert atmosphere to extract fruity aromatic compounds from the grape. It ferments 12 days at a controlled temperature of 28ºC in frustoconical tanks of 17,000 kg capacity and a post-fermentative maceration is carried out that can be extended up to 30 days or more.
Malolactic - For 30 days remains in deposit along with its fine lees, making a smooth battonage to increase its volume in the mouth.
