The wines produced by this winery aim to make wines with a maximum level. The terrain, microclimate and varieties cultivated here contribute to the wines a differential character of the rest of the wines of the area. All Pago de Cirsus wines are made with grapes from the estate and the entire process of production and bottling takes place on the farm itself.
For this, they have modern and functional facilities that allow to put a level of demand at very high levels, respecting the maximum raw materials. The winery is located in the highest part of the estate, from where you can see much of the vineyard, the area of ??the winery is half underground which allows maintaining more stable temperature and humidity throughout the year.
The harvest takes place at the end of August and the first days of September. The white varieties are the earliest and their harvest is nocturnal, when the temperatures are cooler and sheltered from the night; thus we avoid that this delicate grape loses its qualities and oxidizes with the light of day. For the determination of the harvest date we carry out continuous ripening controls, dividing the farm into plots in order to collect each plot that makes up the farm at its optimum moment of maturity.

The Bolandín Farm, is located in the Municipality of Ablitas, in the extreme south of the Navarre Community of Navarra, Spain; at an altitude of 395 meters above sea level.
The farm is a unique vineyard with unique attributes that make it different from any other vineyard, both for its characteristics of the "Terroir" or viticultural medium on which it sits, and for the careful cultivation techniques used, in order to obtain grapes and wines of the highest quality, typical of the territory in which they are obtained and with typical farm or payment.
