Elaboration of Cava Particular Rosado

First alcoholic fermentation at low temperature (14-15ºC). It ferments for 35 days, and then remains for another 30 days along with the lees. Next, the tirage is carried out, carrying out the second alcoholic fermentation inside the bottle, using the Champanoise method. 9 months of aging in the silence and darkness of our cavas.

The San Valero winery 

It has been operating under this name since 1954. Initially, the wines were sold in bulk, but in 1957 the first studies were carried out to install a bottling plant, which was inaugurated in 1962.

Designation of origin of Cava Particular Rosado 

The Cariñena denomination of origin wine presents an exceptional geographical situation for its vineyards, since it is located in the connecting part of the Ebro Valley with Levante, as well as in the middle of the north-south route that structures the Aragonese territory. Cariñena is located in the Ebro Valley, with an extension of land of 14,388 hectares of vineyards. Being an interior territory, the climate of the area is defined as medium temperate, so that the winters are cold and the summers very hot. The Cariñena field is an area specially equipped for the production of red and rosé wines, as well as natural sweet wines. A meal with friends or a family celebration will be complete if we add a Cariñena wine.
