Elaboration of Clave de Sol Tinto
The grapes were harvested with grape harvesting machines at the optimum moment of maturity during the first half of September. They are quickly transferred to the cellar, and after being crushed they are concealed in steel tanks until they acquire the right color for pink. Afterwards, the musts are bled, settling and alcoholic fermentation at a controlled temperature of 17ºC to preserve the maximum amount of fruit, in stainless steel tanks and with selected yeast. Later it is clarified and stabilized in cold at -5ºC. The wine is bottled after microfiltration.

The Cariñena denomination of origin wine has an exceptional geographical location of its vineyards, since the part of the Ebro Valley connection with Levante is located, as well as in the north-south route that structures the Aragonese territory. We located Cariñena in the Ebro Valley, with an area of ??14,388 hectares of vineyards. Being an inland territory, the area's climate is defined as medium temperate, so that winters are cold and summers are very hot. The Cariñena field is an area specially equipped for the production of red and rosé wines, as well as natural sweet wines. A meal with friends or a family celebration will be complete if we add a Cariñena wine.
