Elaboration Finca Constancia Parcela 52
For the elaboration of "Finca Constancia Parcela 52" each year, a "blend" with three forms of fermentation is carried out: in barrel, in wooden "tub" and in stainless steel tank. The barrel fermentation keeps the wine with its fine lees for six months performing the craft technique of the batonnage. In the "tina", the wine takes on character with a touch of very special sweet wood. And finally, the fermentation in stainless steel tank that gives it "freshness". It is a very innovative wine because of its triple fermentation that becomes a "whim" to accompany great moments.

White wine of Verdejo grape with 6 months of aging in French and American oak barrels. It shows a wide range of aromas, from fine herbs and fennel to tropical fruits, ripe pears and peach.
The winery Finca Constancia
Finca Constancia is an avant-garde winery, perfectly integrated into the landscape, where the protagonist is the vineyard. Designed by the architect Gonzalo Tello, it has been conceived to work efficiently in it, while integrating into the landscape where it is located, with cutting-edge technology.
Visually it is divided into three modules perfectly differentiated by the materials they use and which are a faithful reflection of the phases of the winemaking process: the stainless steel wing that houses the fermentation tanks, the glass where the bottling plant is located and the wood that the barrel room collects, this room has a capacity for 1500 barrels with an average life of 5 years.
The design of the vineyard and the winery allows to control the traceability of the wines by the origin of the grapes of each plot. In this way, the quality of the grapes can be assessed according to the different treatments carried out, as well as experimenting with various cultivation and processing techniques. They are always harvested and processed each variety separately, as they reach the optimum degree of maturity.
In the underground nursery, there are 1200 oak barrels resting on metal sleepers at three heights.
For its part, the social area of the winery, focused on wine tourism, has a store, recreation rooms and meetings overlooking the vineyard, as well as a room integrated into the barrel house.
