The grapes are placed, forming a single layer, in small boxes that are stacked in a ventilated interior room of the winery for a natural drying process. These late-harvest grapes then go through the sorting table. These dry grapes are pressed and the must is immediately transferred to three large-format French oak barrels (600 l.) For fermentation and aging. With 355 g. of residual sugar, 15 kg of grapes are required to make 375 ml of wine.

The Jorge Ordoñez h3 winery
Bodegas Jorge Ordóñez Málaga, located in his hometown, was founded in 2004. Arising from the association between Ordóñez and the Kracher family of Austria, the winery was founded with the aim of resuscitating centuries of tradition in winemaking in Malaga, destroyed by the plague of phylloxera during the nineteenth century.
