Winemaking Pajaro Rojo

Traditional elaboration highlighting the fruity and fresh sensations typical of the varietal. Malolactic fermentation takes place in barrels. In addition, it is macerated for 7 days at 28ºC. Finally, it is aged for 4 months in French oak barrels.

The cellar

Innovative project in El Bierzo, whose foundation is viticulture and the interpretation of the Berciano terroir. Located on the Losada estate, halfway between Cacabelos and Villafranca, in Alto de Pieros, the most traditional wine-growing area. From the oenological point of view, the design of the building allows the movement of the raw material by gravity, avoiding the use of mechanical pumps.

Pajaro Rojo Denomination of Origin

It belongs to the DO Bierzo. The Comarca del Bierzo is located in the northwest of the province of León. North of Spain. And it borders the provinces of Ourense, Lugo and Asturias. It occupies an area of approximately 3,000 square kilometers.
