Elaboration of Valdubon Cosecha
After destemming and crushing, the grapes destined to the elaboration of Valdubón Tempranillo are taken to predetermined deposits. The elaboration is carried out in such a way as to preserve to the maximum the primary aromas and the violet color that characterizes the young wines. For this, all tanks are equipped with temperature control, fermentation being carried out at 17ºC. The maceration lasts for 3-5 days. The maceration time is decided based on analytical monitoring and daily tasting, paying special attention to the evolution of the tannic and polyphenolic load in general. The date of discovery is decided after considering the wine with the appropriate body, color and quality and before showing an astringency that makes it necessary to be aged in barrels before going on the market. Alcoholic and malic fermentations are carried out at the same time using co-inoculation techniques, that is, adding the two ferments at the same time. This technique is specially designed to maximize the fruit of the wine in the mouth and nose.

The Bodegas Valdubón are located on the outskirts of Milagros, a town near Aranda de Duero (Burgos).

The winery was founded in 1997 and since that year it has not stopped producing wines.
The vineyard is located on the northern plateau of the Iberian Peninsula, on the banks of the Douro River.

Ribera de Duero is one of the most prestigious appellations of origin in Spain.
The winery manages 155 hectares of vineyards, of which 50% are owned.

Valdubón Roble is made entirely with Tinta del País grape (Tempranillo). The original vines of Valdubón are spread over different terms of Ribera del Duero, the main origins of which are Roa and Milagros. A strict follow-up of the care applied to the vineyard is carried out, focusing the efforts on a severe thinning of bunches that leaves the vine with an average production of 7-8 bunches per vine that suppose a maximum yield of 5,000 kg / Ha.
