Special features of the wine:
Elaboration of Valdubon Roble
Valdubón Roble is an intermediate step between Valdubón Cosecha and Valdubón Crianza. For this purpose, an elaboration is carried out aimed at obtaining a wine that preserves the varietal aromas and the freshness of Valdubón Cosecha but with an initial structure sufficient to carry out a rearing of at least 4 months in oak barrels. The elaboration consists of an average maceration, in conditions that allow to preserve the maximum aromatic potential but that, in turn, makes a sufficient extraction for the structure that we are looking for.
This is, at 28ºC with daily overcrowding not very intense. The end of the maceration is decided at the moment that it is verified that the wine has good structure without aggressiveness coming from an excessive extraction. Alcoholic and malic fermentations are carried out at the same time using co-inoculation techniques, that is, adding the two ferments at the same time. This technique is specially designed to maximize the fruit of the wine in the mouth and nose.
What kind of wine is Valdubon Roble
The aging of Valdubón Roble 2016 lasted four months in new barrels of American oak (75%) and French (25%). The nursery is heated to 17ºC to ensure a slow and without deviations. The periodic tasting indicates the point where the wine shows a perfect balance between its structure and the contribution of wood, this being the right moment to end its barrel aging.
