Fermentation: 19 days in a 20,000 liter stainless steel tank with a controlled temperature of 13º
A cold pre-fermentation is carried out to extract more aromas. After a controlled settling, the clean must, treated in a reductive way, ferments at mild temperatures.

Young white wine with a certain meatiness and good structure on the palate. Wide, fruity and herbaceous finish.

The Valdehermoso winery

It arises in Nava del Rey, in the heart of the D.O. Rueda, cradle of stale wines, the famous “La Nava” wines. Soleras with body, made from oxidative aging that supplied the markets of northern Spain more than 100 years ago.
The winery is a pioneer in the production of wines with aging on lees, incorporating into our wines barrel-made elaborations of different types of oaks and going on to produce wines with a more personal, modern, youthful and elegant character, undergoing enormous changes compared to the traditional wines made in the last century.

Denomination of origin of Viña Pérez 

The Rueda designation of origin is located in the provinces of Valladolid, Segovia and Ávila.
The grapes, Verdejo, Sauvignon Blanc, Viura and Palomino Fino are produced there.
It has 11,700 hectares of vineyards and 55 wine-producing wineries.
Its white wines are world famous, although red and rosé wines are also produced.
