Special features of the wine:

Elaboration Viñas del Vero Riesling 

Given the proximity of the payment "Los Olivos" to the winery, the harvest, carried out manually, is constantly transported in small boxes, due to the delicacy of the skin of the Riesling berries. Immediately afterwards, the bunches are destemmed and the harvest is refrigerated up to 8ºC to carry out the maceration of the must and its skins for a few hours. The flower must is drained by gravity slowly, and left to rest for 24 hours so that it cleanses naturally. Afterwards, a transfer of the clean part to the fermentation tank is carried out, which lasts 9 days. Once the wine is obtained, it remains in storage for 5 months on its own lees, before being filtered and bottled.

Currently, Viñas de Vero is the first winery of the denomination of Somontano for its volume and quality of production. The company has one of the largest vineyard areas in Spain, and it is one of the leading wineries both for its technology and the style of its wines.

From DO Somontano wines from this region are grown in areas with cold winters and hot summers. In spring and autumn sudden changes in temperature are frequent. The average annual temperature is 11 degrees Celsius.

The riesling grape

The payment "Los Olivos" is characterized by having a deep soil, not very fertile and of great drainage with enough thick elements. With Holocene detritic origin, calcareous and fluvial fluxes by concentration of limestone, fluvial terraces and glaci, is located at an altitude of 405 meters above sea level with east-west orientation10º avoiding direct insolations in cluster but good foliar exposures.
