Rosé wines

The rosé wine is made from red grapes or a mixture of inks and whites whose fermentation is carried out in the absence of the skins, reaching the wines a certain coloration. This is the fundamental reason for its color, the fact of being very little time in contact with the skin.

The elaboration of rosé wine

It is made after a short maceration in the cold of the must, mainly the first or flower must, with its skins, without fermenting until reaching the desired pigmentation and then the "sacred" or quick separation of the must and the solid paste.
Its process is similar to that of red wine, but with special peculiarities. We have to say to make these wines we use red grapes and these must be picked at the right time, so that the acidity and sugar level are optimal.
The first phase is Destemming and Squeezing, where we separate the grapes from the rest of the cluster. The destemming today is done mechanically with specific machines for it.
• Afterwards the Crushing is carried out, which consists of crushing the grapes to extract the must. In this way we separate the wort from the skins. Care must be taken not to break the seeds of the grape, to avoid bitter tastes.
• The second stage of processing is Maceration. It consists of letting the must with the skins rest for a period of 24 hours. It is important that the temperature is lowered. In this way, the must is taking color
• Bleeding is the third stage of the process, and consists of separating the amount obtained in the fermentation of the skins.
• Once the must is clean, the fermentation process takes place at a temperature between 14º and 16º. This fermentation is produced in stainless steel tanks, although you can also use wooden barrels. Depending on the duration of the fermentation, the wines will be drier or sweeter. The winemaker determines what type of wine he wants and can therefore interrupt this phase before or after. In rosé wines, aging wines are not usually given.
• Trash: it is to change it repeatedly of deposit or container to be eliminated the waste in suspension.
• Filtering: in order to continue cleaning the wine, it is subjected to a filtration in order to eliminate the smallest particles.
