• Bleeding is the third stage of the process, and consists of separating the amount obtained in the fermentation of the skins.
• Once the must is clean, the fermentation process takes place at a temperature between 14º and 16º. This fermentation is produced in stainless steel tanks, although you can also use wooden barrels. Depending on the duration of the fermentation, the wines will be drier or sweeter. The winemaker determines what type of wine he wants and can therefore interrupt this phase before or after. In rosé wines, aging wines are not usually given.
