Elaboration of Vetiver Verdejo
A small cold maceration of about 4 hours is carried out. Subsequently, a static sedimentation at low Tª is made, followed by alcoholic fermentation at 15º of Tª with yeasts selected by the winery itself. In this type of wine malolactic fermentation is not carried out.
