Special features of the wine:
Harvest in boxes in the 2nd Fortnight of October.
Once the grapes are transferred to the cellar, they are cooled with dry ice and then de-stemmed and shelled manually (all grains with a defect are eliminated:
crepes, raisins, greens, etc ...) to open barrels of 500 lts. After a cold maceration of approximately 7 days, the wine ferments naturally with its native yeasts, with several daily battonages. Once fermented and pressed, it performs malolactic fermentation in the same 3 year old barrels where it makes the alcoholic fermentation.
Later the wine remains 12 months more in barrels until bottled without filtering or stabilizing.
Finca wine. Production limited to 973 bottles.
Aging in wood: 12 months in 400 liter casks, French oak

The D.O.P. Calatayud is located in the westernmost part of the province of Zaragoza, 87 kilometers from Zaragoza and only 1 hour from Madrid on AVE.

The D.O.P. Calatayud is located within the Community of Calatayud region belonging to the province of Zaragoza and bordering the provinces of Soria, Guadalajara and Teruel.
From the geomorphological point of view, the Calatayud basin is a miniature reproduction of the Ebro basin with three differentiated units: the outer saws, the interior of the pit and the piedmont.
It is an area of ??complicated orography, located in the foothills of Moncayo and characterized by a complex hydrographic network formed by various tributaries of the Ebro River, such as Jalón, Jiloca and other minor. The vineyards descend on the slopes of the mountains, with altitudes ranging between 550 and 1,040 meters.
The land is undulating, with most of the vineyards settling on stony, loose soils, very poor in nutrients and with a high proportion of limestone. They have good permeability and are healthy.
Varieties of grapes used: 98% Garnacha 2% Macabeo, Garnacha Blanca, Provechón, Monastel.
Vineyards on clay soil, at a height of 840 m.
