The Denomination of Controlled Origin unites a product with its geographical origin and submits it to rules of production and elaboration. The products recognized in AOC are the expression of an intimate bond between a production and a terroir, all applied and perpetuated by the technical knowledge of men.
The main rules of the Champagne AOC are:
A strictly delimited area.
Authorized strains:
chardonnay, pinot noir, muenier, pinot blanc, pinot gris, arbane, small meslier.
Pruning of the vine: Royat, Chablis, Guyot, Valley of the Marne.
Limitation of yield in grapes per hectare.
Yield in the pressing.
Minimum grade of potential alcohol, by vintage.
Second fermentation in bottles and ripening on lees for 15 months minimum for wines without vintage, 3 years for vintage wines.
