Special characteristics of the wine:
The grapes arrive at the winery in perfect sanitary condition and optimum maturity. They are introduced into a pneumatic press, where a gentle and moderate pressing is carried out. Once the solid residues of the must have been eliminated, by static settling at 8ºC, the clean must undergoes alcoholic and malolactic fermentation in new French oak barrels. The wine remains in contact with its lees in the same barrels for seven months, with fortnightly batônnages. Finally, the wine is clarified with bentonite and stabilized at -5 ºC to eliminate excess potassium bitartrate.
Balance between fruit and oak and in which the relevance of an impeccable work carried out with the lees and their aging in barrels is evident.
The winery decided from its beginnings, in 1992, that the marriage of oenology and contemporary culture would be an essential feature of its character. It was a risky challenge from a business point of view and from an artistic perspective. But the triumph was undeniable and created a school. The concept finally prevailed: sublime ideas become evident once someone, ENATE, has had the courage to intuit them.
It was, in effect, creative will. In the same way that a winery without wine is unthinkable, ENATE assumed that art was the very essence of its identity. They are concepts that are born together and enrich each other. The human being is essentially a creator, in one way or another, and loves vital pleasures by nature. In 1992, ENATE formalized its commitment to bring the two concepts together by contrasting the almost mathematical expertise of the winemaker with the unpredictability of the artist inspired by winemaking. Today, ENATE is a winery and museum. It is both a wine bar and an art gallery, and has forged its personality in the exquisiteness of both. Its barrels and walls summarize the great wines of Spain, inhabited by the genius of the great Spanish and international creators
This Somontano Designation of Origin is of cold winters and hot summers. In addition, in spring and autumn sudden changes in temperature are frequent.
The average annual temperature is 11 degrees Celsius.
These wines usually have a very good alcohol content, and a perfect acidity. They are usually fruity.
Variety: 100% Chardonnay
Take with fatty fish, such as white meats, smoked and spicy dishes such as rice sautéed with curry prawns. It can also be taken with desserts.
