Elaboration of Cava Conde de Haro
The musts carry out a first fermentation in wooden tanks of 1,000 liters to be preserved in them until the end of April. From here the second fermentation is caused in the bottle. The wine is kept in rhyme for at least 14 more months.
What kind of cava is Conde de Haro
It is sweet but fresh at the same time thanks to its great acidity. The combination of fruit / acidity / fine lees causes a surprising sensation of fullness in the mouth that invites to continue tasting. In aftertaste the fruits return this time with greater dominance of spices that leave a pleasant memory for a few seconds to the taster.

Pertaining to the sparkling wines cava. The highest production of these sparkling wines is in the Alto Pendes, but we can also find large cavas in the region of Aragón.
Cava sparkling wines are produced in Spain. The region best known for the production of cavas is Sant Sadurní d'Anoia, within the Alto Penedés region. From this region, most of the national production of cava is obtained.
Varieties of grapes used in Conde de Haro
Varieties used for this cava are Viura (90%) and Malvasia (10%).
It is the same area as the vineyards of Prado Enea, high areas, but unlike these are slopes facing north with the aim of protecting the vineyards from the heat that could alter the delicate varietal aroma needed in cellars.
