Description
Description:
The technique consists of introducing the grape bunches without destemming or breaking into the tank. The weight of the bunches at the top, makes the grapes that remain below break, partially releasing the must that will begin an alcoholic fermentation.
From this fermentation, the CO2 is released, which displaces the oxygen in the tank and, in the absence of the latter, providing the ideal atmosphere for each grain to start its own fermentation, called intracellular.
Carbonic Maceration wines are characterized by their chromatic intensity in which violet and fuchsia tones stand out. They are, therefore, bright and high robe. Very fruity and floral on the nose, with an accentuated strawberry and raspberry aroma.
