- TASTING NOTES: View: Bright and clean with medium intensity. It preserves its bluish and violet tones while observing some paler reds, typical of rosés made from the Tempranillo and Garnacha varieties. Nose: It appears clean and elegant, with medium intensity and frank aromas, predominating strawberry aromas with a certain milk tone, being able to remember strawberry yogurt. Subtle notes of aromatic plants such as mint and spearmint. Mouth: Very pleasant attack, its passage through the mouth is long and persistent. More red fruit, more ripe than in the nose, and very pleasant due to residual sugar.

Its elaboration is made using the best old vines of Tempranillo, from the El Carrascal farm, we bleed 20% of the must. Both this Tempranillo and Garnacha are pressed upon arrival at the winery to preserve freshness to the maximum. Finally a small percentage of Cabernet Blend must improve its structure and fleshiness. The fermentations of the three varieties last fifteen days at 17 degrees. The fermentation is stopped, leaving three grams per liter of residual sugar that gives a pleasant passage through the mouth.
Pairing: to take as an appetizer or accompanying rice, risottos and white meats. If it is taken with pesacado they should be blue fish.
