Harvest harvesting takes place during the second week of October, discarding at the end of July the excess clusters in each strain leaving a small amount that arrives in optimum conditions of concentration to the vintage. After the selection of the clusters in Bodega and later maceration (8-10 hours) is fermented with indigenous yeasts from the foot of Cuba, carried out days before at a low temperature and very prolonged in time.
