It was the first week of October when we harvested Garnacha de Secastilla, after having harvested Syrah and Parraleta during the second half of September. In all three cases, the harvest was done manually, and we destemmed the grapes at the vineyard to start the encubado right there. After cooling, the alcoholic fermentation was carried out at a temperature below 25 ° C for twelve days. After the discovery, the wine was cleaned naturally by decanting, and three racking was carried out before filling the French oak barrels, where it remained for eight months. Once the barrel aging was finished, the wine was filtered and bottled.
