Once at the winery, the harvest passes through a sorting table and is then gently destemmed without crushing.
Alcoholic Fermentation – A cold pre-fermentation maceration takes place in an inert atmosphere to extract fruity aromatic compounds from the grape skins. Fermentation takes place for 15 to 25 days at a controlled temperature of 29°C in 17,000 L truncated cone-shaped tanks. Two pumpovers are carried out daily to extract all the compounds that make this wine both elegant and powerful.
Malolactic fermentation – This process takes place in a stainless steel tank along with its fine lees, with a gentle battonage to increase its volume on the palate.

Miros Vendimia Seleccioneda Designation of Origin
Designation of Origin on the banks of the Duero River, 115 km long and 35 km wide.
Located in the regions of Castile and León, it extends through the provinces of Soria, Burgos, Segovia, and Valladolid.
This appellation was established in 1982, and primarily produces red and rosé wines.
To qualify for this designation, the wine must contain at least 75% Tempranillo grapes and be grown in the appellation's areas.
Other grapes are Cabernet Sauvignon, Malbec, and Merlot, and to a lesser extent, Garnacha and Albillo.
