Production of O Luar Do Sil Godello on Lees

The grapes are harvested in mid-September, selected and placed in 15kg crates. Once destemmed, the grapes undergo cold maceration at temperatures below 8 degrees Celsius to obtain maximum fruit expression. The wine is pressed at low pressure, racked to remove the gross lees, and fermented with selected yeast at a controlled temperature for 14 days in stainless steel tanks.
After fermentation, the fine lees are retained to enhance creaminess, body, and aromatic intensity through gentle bâtonnage (lees stirring) for six months, after which it is naturally clarified.
