Skin maceration for 3-4 days and in total between 10-12 days. Fermentation of each variety separately in stainless steel tanks at a controlled temperature of between 22ºC-24ºC.

The origins date back to 1958, the year in which the winery was bought from a private individual and the Borja Cooperative and the original Borsao brand were founded. The first bottles were sold in 1981 and the first exports were made in 1991.
Some years later, the Pozuelo and Tabuenca cooperatives joined Borja's, contributing their human resources and, most importantly, their vineyards. This union took place in 2001 establishing a new company called Bodegas Borsao S.A.
The 700 members of the cooperatives and the management team promoted the foundation of the new winery: beginning to set the guidelines for the care of the vineyards, harvest and reception of the grapes and continuing with a renovation of the winery's facilities. Currently there has been more professionalization and now we are 375 winegrowers.
The technological capacity, the modernity of the facilities, the great potential of the vineyards and a meticulous sensitivity for a job well done, make up the basic pillars of the winery, consolidating the BORSAO brand as the maximum exponent in quality wines of our denomination of Origin Campo de Borja.
Designation of Origin of the wine Borsao Tinto Joven
Campo de Borja is located in the northwest of the province of Zaragoza, 60 km from the capital.
It is a transition area between the mountains of the Iberian System and the Ebro Valley.
It includes the Somontano del Moncayo and extends along the Valle del
Huecha river and the so-called Llanos de Plasencia.
Side. Campo de Borja treasures authentic jewels among its wines in which the “Garnacha” variety reaches all its splendor.
In the lower area, with altitudes between 350 and 450 metres, we find brown limestone soils and “garnachas” in both traditional goblet and trellis formation. It is the area of ??earliest maturation and includes the vineyards of Magallón, Pozuelo de Aragón... Its wines are warm, powerful and very aromatic.
The middle area is characterized by having the highest concentration and density of vineyards. It includes the vineyards located between 450 and 550 meters of altitude. The soils of the terraces of the river "La Huecha", a tributary of the Ebro and all gravelly and clay-ferrous soils are found. There are the vineyards of Ainzón, Borja, Fuendejalón.... in a relief of gentle slopes and good exposure to the sun. Its wines are very complex, intense, structured and fleshy.
The upper area of ??the D.O, whose vineyards extend from 550 to 700 meters above sea level, corresponds to the foothills of Moncayo. They correspond to the vineyards located in the high areas of Ainzón and Fuendejalón, as well as the municipalities of Tabuenca, El Buste, Vera. Their wines are fine, subtle and elegant.
