Elaboration of Monasterio Las Viñas Reserva
The grapes are macerated cold (6ºC) for 96 hours and fermented for 8 days in stainless steel tanks at a controlled temperature of 28ºC. Once the fermentation has been carried out, the wine will macerate between 15 and 20 days to finish extracting the full potential of the grape.
What kind of wine is Monasterio de las Viñas Reserva
The aging takes place separately: the Tempranillo and the Cariñana in French oak barrels and the Garnacha in American oak. Choosing the best barrels, the final mixture is made, bottled and left to rest and bottled for at least 24 months.
The winery Grandes Vinos y Viñedos
GRANDES VINOS manages both the full cycle of vineyard cultivation and the production and marketing of wines. To guarantee maximum quality, in 2002 the new and modern facilities of the winery were inaugurated, more than 60,000 m2, which meant a strong investment, around 12 million euros, with the latest technological advances that are constantly renewed and which highlights a bottling line with a capacity of 12,000 bottles / hour.

Cariñena is the only region in the world that gives its name to a variety of grapes, the Cariñena, due to its origin. The same name Cariñena, was used to distinguish the Denomination of Origin in 1932, along with others, the oldest officially recognized in Spain.

Monasterio de las Viñas Reserva is a blend of the varieties Garnacha (70%), Tempranillo (20%) and Cariñena (10%), from vineyards between 35 and 45 years old planted in a glass. The harvest is done manually.
