Preparation of Montecillo Rosado
The grapes of the freshest vineyards are chosen and to attenuate the excess of alcohol typical of this vintage, a typical white variety of Rioja of famous plasticity is used in the coupages and of sublime acidity. For Tempranillo and Garnacha, short cold macerations are performed with the skins always in an inert atmosphere. Once a very subtle, elegant and low hue color is achieved, the must is obtained by the gravity bleeding method. For the Viura a soft pressing is done to obtain the tear must always in a controlled atmosphere. Each variety carries out the alcoholic fermentation separately at low temperature, to enhance the delicate aromas of each variety, in small capacity tanks of two types: porous ovoids and another part in stainless steel. Garnacha and Viura perform a partial malolactic fermentation. Once this process is completed, the three varietals are assembled and the wine is kept in suspension with the fine lees to give breadth and mouth to the wine.
