Elaboration of Red Mariguena 

The harvest was carried out at dawn and transported very quickly to the winery to preserve all the fresh and fruity aromas that, from the grapes themselves, were immediately lightly crushed and refrigerated up to 7ºC, then they were taken to the fermentation tank where the must remained. macerating with its skins for three days, at which time the alcoholic fermentation began. After four days, it was uncovered and pressed to obtain the wine, which was later refrigerated to stop fermentation in order to maintain the desired natural sugar. Later it was filtered and clarified, always kept cold, until the moment of bottling.
