Elaboration of Enate Rosado 

The grapes are harvested during the early morning and, already in the cellar, they are kept in maceration with the skins until the bleeding of the pink must. Once the solid waste has been removed, by static settling at 8ºC, the clean must is fermented, under the action of selected yeasts of the genus Saccharomyces cerevisiae, to stainless steel tanks at a controlled temperature (16ºC). After fermentation, the wine is clarified with bentonite and stabilized at -5ºC to eliminate the excess of potassium bitartrate.

The winery Enate 

The winery decided from its beginnings, in 1992, that the marriage of winemaking and contemporary culture would be an essential feature in its character. It was a risky challenge from a business point of view and from an artistic perspective. But the triumph was incontestable and created school. The concept ended up being imposed: the sublime ideas become evident once someone, ENATE, has had the courage to intuit them.
It was, in effect, creative will. Just as a cellar without wine is unthinkable, ENATE assumed that art was the very essence of its identity. They are concepts that are born together and enrich each other. The human being is essentially creator, in one way or another, and loves by nature the vital pleasures. In 1992, ENATE formalized its commitment to combine both concepts by contrasting the almost mathematical expertise of the winemaker with the unpredictability of the artist inspired by oenology. Today, ENATE is a winery and museum. It is at the time vinoteca and artistic gallery, and has forged its personality in the exquisiteness of both. Its barrels and walls summarize the great wines of Spain, inhabited by the genius of the great Spanish and international creators
