Wine Characteristics
Tobia Cuvee Crianza Winemaking
The majority of the wine is made using a destemming process where the grapes undergo cold maceration on the skins (12ºC) for 48 hours. This vinification takes place in our "smart tanks" with gentle destemming and without crushing the grapes, for 7-9 days at a controlled maximum temperature of 23-25ºC, to encourage the extraction of fruity aromas. The vinification is completed with aging in second- and third-use American oak barrels with light toasting for a period of 12 months. A small portion of the final blend, from the youngest vintage, is made using the traditional whole cluster method with stems. Final blending of the different wines and clarification with egg whites before bottling
