Viridiana de Atauta h3 Winemaking

Once the harvest is complete and the grapes have been transported to the winery, the first phase of alcoholic fermentation takes place in stainless steel tanks at a controlled temperature between 26º and 28º Celsius. The Viridiana must then undergoes malolactic fermentation, again in tanks.

Before being bottled and sold, it rests for three months in French oak barrels.

The Dominio de Atauta Winery

Dominio de Atauta is built on a rocky hillside overlooking the valley, surrounded by vineyards. It slopes down to the valley in four levels, allowing us to make our wines using gravity without damaging the excellent raw materials.

Viridiana de Atauta Designation of Origin wine

It logically belongs to the Ribera del Duero Designation of Origin. This designation is located on the banks of the Duero River, which stretches 115 km in length and 35 km in width.
Located in the Castile and León region, it extends through the provinces of Soria, Burgos, Segovia, and Valladolid.
This designation was established in 1982, and primarily produces red and rosé wines.
To qualify for this designation, the wine must contain at least 75% Tempranillo grapes, grown within the designated areas. Other grape varieties produced include Cabernet Sauvignon, Malbec, and Merlot, and smaller quantities of Garnacha and Albillo.

The harvest is always done by hand, and the grapes enter through the top floor, from where they fall by gravity into the tanks located on the next floor. On a third level is the barrel room, where approximately 600 French oak barrels are located.
