Elaboration of Dominio Fournier Crianza
All the grapes go through the selection table and continue towards the tanks through a conveyor belt, avoiding mechanical damage during the incubation. Each parcel is made separately in small tanks. Cold pre-fermentation maceration with dry ice is practiced, to obtain, before proceeding to alcoholic fermentation, a high extraction of sweet tannin and color. Alcoholic fermentation is carried out in a controlled manner in stainless steel tanks and wooden vats, where daily pump-overs are carried out that favor the extraction of sweet tannin and color. Each deposit is uncovered and goes to the barrel to make malolactic fermentation, where frequent batonages are carried out to help work the lees.
