During the period between alcoholic fermentation and malolactic fermentation, they remove their lees weekly to achieve a greater volume in the mouth, obtaining a wine more silky and kind.
For 7 months in French oak barrels, followed by 6 months in new oak from the Caucasus. Unclarified and unfiltered wine, as these processes occur naturally over time, by sedimentation and natural decanting in the barrel.
