Production of Ontañon Kaori Blanco
After a gentle, static, natural settling process of two days, fermentation began slowly at 14°C in stainless steel tanks, lasting for 19 days. The wine then rested for an additional three or four days, allowing the coarser lees to settle naturally. Subsequently, it was transferred to first and second-use American oak barrels, where it remained for three months on its fine lees.
