Crafting Rippa Dorii Solomon 

The grape is cooled to 8-10 degrees during maceration in order to fix the aromatic compounds. The hat is continuously soaked in must without mechanical procedures and with gentle pumping over. We take advantage of the carbon dioxide from fermentation in the winemaking process. The fermentation lasted for 19 days with gentle natural daily pressing until it was uncovered. Malolactic fermentation takes place in new Iberian oak barrels (Spanish oak) with two weekly punchings.

Salomón is an old vine of Tempranillo in glass of less than 4 hectares planted in royal framework more than 40 years ago in Fuentecén. A plot with gentle natural slopes at heights that exceed 820 meters above sea level.
