The nose shows frank, cheerful and fruity, highlighting the fresh red and black fruit mixed with notes of coconut, cocoa and Spices of licorice and thyme. In the mouth it is powerful and velvety at the same time. Cheerful and soft attack due to good acidity, balanced with high alcoholic strength of the vintage. Once in the mouth, it shows an elegant evolution of ripe tannins. Finally, its acidity helps the palate giving it a long aftertaste.

Development of Valdubon Crianza
After destemming and crushing, the grapes destined for the elaboration of Crianzas are taken to predetermined deposits. The elaboration of future aging is designed in a way that favors the extraction of color and tannin keeping the fruit in the aroma. All tanks are equipped with temperature control, with fermentation at 28 ° C. The maceration lasts for 15-21 days. The maceration time is decided based on the analytical monitoring and daily tasting, with special attention being paid to the evolution of the tannic and polyphenolic load in general. The date of decoupling is decided after considering the wine with sufficient body to guarantee a good evolution in the barrel and before perceiving green tannic notes that decrease the quality of the product. Once discovered, malolactic fermentation is carried out, daily monitoring its analytical evolution. After completion it is trashed until it is clean and ready for its entry into the barrel
What type of wine is Valdubon Crianza
The stay in Valdubón Crianza 2015 barrels lasted for 12 months in American (67%) and French (33%) oak barrels. All the barrels used are under 36 months old. The periodic tasting determines the duration of the aging. Its stay in wood is considered concluded when the wine has a sufficient roundness in the mouth and an adequate aromatic level that complements the initial fruit giving it complexity in the nose. Racking takes place every 4 months to ensure aging without deviations, taking special care to avoid excessive oxygenation of the wine that damages its color and aromas during this process.
The Valdubon winery
The Valdubón Wineries are located on the outskirts of Milagros, a town near Aranda de Duero (Burgos).
They are part of the Denomination of Origin Ribera del Duero.
The winery was founded in 1997 and since that year has not stopped producing wines.
The vineyard is located on the northern plateau of the Iberian Peninsula, on the banks of the Duero River.
These lands have been cultivated for more than 2,000 years and today,
Ribera de Duero is one of the most prestigious appellations of origin in Spain.
The winery manages 155 hectares of vineyards, of which 50% are owned.
The vines are country ink, merlot and cabernet sauvignon.

Valdubón Crianza is made with Tinta del País (Tempranillo) grapes from vines over 40 years old. The original vineyards of Valdubón Crianza are distributed by different terms of Ribera del Duero, being Roa, Pardilla and Milagros its main origins. The work carried out in the vineyard is aimed at obtaining a grape in perfect sanitary condition and controlling yields that guarantee a high concentration fruit. To do this, cluster thinning is performed, leaving an average production of 7-8 clusters / strain that yield less than 4,500 kg / ha. The quality of the grape is completed with green pruning, guaranteeing the perfect aerated and sunny grape during the whole ripening process.
