Preparation of Montecillo albariño
Manual harvesting in small baskets and later transfer to Warehouse. Pre-maceration and gentle pressing. Very slow fermentation with autochthonous yeasts at low temperature, extracting all its aroma and freshness. Contact with its fine lees for several weeks and then stabilized and filtered to give a perfect shine and reflections before bottling.
It remains for several months in stainless steel tanks before its release to the market, to harmonize and enhance its aromatic explosion.

Designation of origin Rias Baixas
The DO Rías Baixas belongs to the region of Galicia. Specifically the form the coastal part of a part of Galicia, concerning the provinces of La Coruña, the province of Pontevedra to the Ria de Vigo.
The variety of Albariño grapes has been cultivated in these lands for more than 1000 years, and since the 12th century the existence of Albariño wines has been known. Bo octante is from the mid-twentieth century, when this variety extends throughout the territory.
