The grapes are harvested manually, then be crushed gently and pressed directly with the whole bunches. They go through a maceration for 12 hours and a fermentation in stainless steel tanks.

Denomination of Origin Pato Mareado
Rías Baixas is a designation of origin belonging to the region of Galicia. Specifically, it forms the coastal part of a part of Galicia, concerning the province of La Coruña, the province of Pontevedra to the Vigo estuary.
The Albariño grape variety has been cultivated in these lands for more than 1000 years, and the existence of Albariños wines has been known since the 12th century. Bo octante is from the mid-twentieth century, when this variety extends throughout the territory.
In the 80s, the Rias Baixas Regulatory Council and the Rias Baixas Designation of Origin were created.
Grape varieties used in Pato Mareado wine
Pato Mareado White Wine is made with 100% albariño grapes and belongs to the D.O. Rías Baixas.
Variety of native white grape from Galicia, and main crop in the DO Rias Baixas. Probably they were the monks of Cluny, in the s. XII, who extended the cultivation of this grape, of possible Germanic origin, from the monastery of Armenteira in the Pontevedra region of O Salnés.
The cluster of early ripening and medium vigor, is medium-small, compact, with a loose and pyramidal shoulder. The berry is small in size, spherical with a thick green-yellow skin sprinkled with freckles. The musts of the Albariño variety require cold macerations. It gives a good alcoholic and glyceride grade, also a high acidity, so that wines with a long longevity, concentrates and envelopes are achieved.
