Description:
Harvesting is only carried out at the optimum time of ripening. After destemming and squeezing, La Vicalanda Reserve goes through a maceration of about three weeks at 28º temperature. Alcoholic and malolactic fermentations are produced, and the wort is then passed through a racking to purify the lees and enter the barrel.
