The wines produced by this winery aim to make wines with a maximum level. The harvest takes place at the end of August and the first days of September. The white varieties are the earliest and their harvest is nocturnal, when the temperatures are cooler and sheltered from the night; thus we avoid that this delicate grape loses its qualities and oxidizes with the light of day. For the determination of the harvest date we carry out continuous ripening controls, dividing the farm into plots in order to collect each plot that makes up the farm at its optimum moment of maturity.

The Bolandín Farm, is located in the Municipality of Ablitas, in the extreme south of the Navarre Community of Navarra, Spain; at an altitude of 395 meters above sea level.
The farm is a unique vineyard with unique attributes that make it different from any other vineyard, both for its characteristics of the "Terroir" or viticultural medium on which it sits, and for the careful cultivation techniques used, in order to obtain grapes and wines of the highest quality, typical of the territory in which they are obtained and with typical farm or payment.
